Sustainability is now non-negotiable for forward-thinking brands

Every year, the conversations around sustainability increase, and the pressure is ever-growing from consumers and stakeholders for brands to truly act to futureproof our coffee and tea industries, as well as the planet itself, for future generations. This special section of our annual Sustainability Issue highlights some of the work and projects tea and coffee brands are undertaking to enact long-lasting change and impact. By Kathryn Brand

Efforts at origin

Clipper Teas is the United Kingdom’s first and longest-standing Fairtrade tea partner, values which have been intertwined with the brand since its inception. Clipper shares its mission with Fairtrade to raise awareness of the benefits of sustainable farming for people and the planet, informing its decision to also be certified organic. This year, Clipper launched its There’s Tea, Then There’s GOOD Tea campaign across Europe, aiming to highlight its brand story and show that it takes more than just taste to make good tea, specifically ethical and sustainable growing practices. At Clipper, this means supporting tea estates and smaller farms to become more sustainable, while paying workers fairer wages, including the Fairtrade Premium, which communities can spend in areas they decide are most needed.

Recently, Clipper’s Fairtrade Premium was used to fund an ambulance for a Mozambique tea estate. Over the past three decades, Clipper has contributed an estimated GBP £6.8 million to the Fairtrade Premium, and much of the tea bought by Clipper today is the same as 25 years ago, since when Clipper has supported the farms to become biodiverse and wildlife-friendly. Long-standing support and nurtured relationships with tea farmers is essential to their sustainability.

Sustainability at origin is not only crucial for the continuation and success of tea production, but for the people in the tea growing communities. This is evidenced in DavidsTea’s Nepal Water Project. The Canada-based tea brand recognises that clean water is not just a fundamental human right, but the essence of its product, from nurturing the Camellia sinensis plant, to brewing a cup of tea. DavidsTea has aligned itself with the United Nations Sustainable Development Goal 6, which aims to ensure the availability and sustainable management of water and sanitation for all. DavidsTea has joined forces with Jun Chiyabari, a key partner from which the company sources its Organic Nepal Black Tea, to tackle the clean drinking water issue in Jun Chiyabari Tea Garden in Nepal’s Dhunkuta district. The local government schools, crucial for the education and well-being of the community’s children, suffer from a lack of clean drinking water. This not only hampers the health of the students and staff but also affects their overall educational experience.

The collaboration began during DavidsTea’s 2020 Giving Week, in which it dedicated five percent of all loose leaf tea sales on 28 November to find clean water initiatives in Nepal. Jun Chiyabari then matched DavidsTea’s contribution, allowing it to expand the project to encompass not just three but four schools. In August 2021, Phase 1 was completed: the installation of sustainable water filtration systems in four schools, impacting over 3,200 children and staff. In March 2022, DavidsTea continued its commitment to the project, directing one percent of the proceeds from its Organic Nepal Black Tea to the mission, allowing it to begin Phase 2 in March 2024, through which it is aiming to bring clean water to two additional schools. This latest phase is expected to reach a further 862 students and staff across six schools in seven buildings.

Last year, illycaffè launched the first coffee produced through 100 percent regenerative agriculture. Brasile Arabica Selection Cerrado Mineiro is Regenagri certified, a third-party programme that certifies regenerative agriculture claims. It supports farms and organisations to transition to holistic farming techniques that increase soil organic matter, encourage biodiversity, sequester CO₂ and improve water and energy management. Italy-based illycaffè believes investing in the people who grow coffee is just as crucial in protecting the ecosystem and so funds a number of initiatives that further this goal:

  • The Seeds for Progress Foundation helps to build new schools and offers training for teachers in Nicaragua;
  • Reforestation in Colombia works to restore native vegetation, clean groundwater and improve the living environments for coffee growers;
  • Farmer Field School is supporting women in Rwanda since 2019 when illycaffè financed the acquisition of a coffee plantation and planted around 2,500 certified-quality coffee plants to function as a Farmer Field School for 40 women coffee producers;
  • Viveiro de Atitude programme helped build nursery housing for over 100 plant species in Brazil, preserving biodiversity and water resources as well as promoting environmental education in the country.

illy is investing in quality research and collaborating with a research project to: sequence the genome of Arabica coffee to help coffee growers adapt their plants to the changing climate conditions; it is building long-lasting relationships with growers based on knowledge-sharing and sustainable growth; and implementing a new certification protocol for coffee procurement, monitoring supply chains, guaranteeing the quality of the product, and protecting the environment and worker safety.

Pact Coffee has been fundraising reforestation projects and working only with farmers that follow sustainable practices for years, but in 2020 launched Cenicafé 1, a coffee variety developed over 20 years by the Colombian Coffee Growers Federation (FNC). As the world heats up, many Arabica coffee varieties struggle to grow. These warmer temperatures also bring a higher likelihood of disease to coffee plants, plus the conditions that plant-killing pests thrive in. It’s a problem that’s forcing farmers to go higher up into the mountains, causing deforestation and economic hardship. Cenicafé 1 is resistant to a number of fungal diseases, can be grown all over Colombia, and offers a high density of coffee cherries, giving farmers greater harvests on small amounts of land. It has quickly achieved high cupping scores and this year Pact launched its first limited edition Cenicafé 1 from the Buenos Aires farm. UK-based Pact is working to widen the recognition of Cenicafé 1 to increase demand for the variety worldwide and show Colombian farmers that there’s a profitable future in a sustainable variety on their existing farms.

To assess and improve conditions across the global community of coffee growers, Peet’s Coffee has partnered with Enveritas. The non-profit organisation uses technology combining AI and satellite imagery with on-the-ground surveys to: conduct 20,000 sustainability audits of smallholders each year; invest in over 30 different impact projects spanning Central America, South America, and the Indo-Pacific; work with World Coffee Research to provide funding for genetic conservation of coffee; have 24 countries verified by Enveritas for responsible sourcing; and, as part of JDE Peet’s, work towards fully validated science-based targets to contribute effectively to the fight against climate change and be at the forefront of deforestation prevention and restoration.

California-based Peet’s engages with Enveritas each year to evaluate the impacts of its projects: in Guatemala, the company has partnered with TechnoServe to train smallholder coffee farmers in overcoming agronomic and economic hurdles impeding their businesses and livelihoods; in the biodiversity hotspot, Finca Don Bosco, Panama, Peet’s collaborates with Smithsonian Migratory Bird Center to protect migratory songbirds by ensuring canopy cover, tree height, and biodiversity; and Peet’s has constructed the Butterfly School Papua New Guinea Bunum-Wo Estate, serving as educational enrichment and health care learning for nearly 200 young children of the farm’s workforce and the surrounding community.

Despite challenges such as climate change and economic instability, over the past year, 99.7 percent of Traditional Medicinals’ herbs were certified organic, and 30.1 percent were fair-certified. The California-based company advised on the creation of the FairWild standard and Foundation, which sets standards for sustainable wild collections of medicinal plants, ensuring that plant material is harvested ethically, sustainably and transparently. Traditional Medicinals has set a goal of sourcing 80 percent fair-certified herbs by 2030, to which its Fair for Life certification marks significant progress. This year, the company has reinvested over USD $174,000 in fair premiums into source communities, a 10.6 percent increase from the previous year. Traditional Medicinals has invested a further $2 million to origin community projects, local non-profits and certification standards. In Zimbabwe, 4,000 people gained access to safe drinking water, 510 farmers in Madagascar were trained in sustainable agricultural practices, and 2,300 women in Egypt participated in health education.

In-House and the community

Birchall Tea has opened its brand-new fully solar-powered tea factory in Wiltshire, England. Its roof-top solar installation features more than 460 solar panels, which are capable of generating all the clean renewable electricity for its on-site operations. The purpose built, state of the art tea factory generates so much energy, that it even puts power back into the National Grid. In addition to this, in May 2020, Birchall achieved the Carbon Neutral International Standard, which means that all of its products are 100 percent carbon neutral.

Similarly, Equator Coffees has reduced its carbon emissions by 80 percent per roasted coffee batch through its investment in energy-efficient Loring Smart Roasters. Other sustainable practices Equator undertakes in its roastery include donating its burlap coffee bags to local farms, composting its chaff locally, and upcycling coffee excess with Extrafood. For its cafés, the California-based company is always looking out for partnerships and resources to improve its sustainability efforts. In 2023, Equator launched its Too Good To Go programme in five of its cafés, aiming to fight food waste by providing surplus food to customers at a reduced price. Equator plans to expand the programme across as many of its retail locations as possible. It continues to encourage its customers to get their drinks in for-here serve ware and use their own reusable cups in its cafés, offering a USD $0.25 discount for customers who bring their own cups, both of which have seen a significant use increase since 2022. The to-go cups and containers that Equator does offer are 100 percent compostable.

Sustainable packaging has long-been a priority for illy. Its cans and tins are made from recyclable metal, and it has recently launched its new certified ESE compostable coffee pods which come in illy’s three blends: Classico, Intenso and Decaffeinato. illy was also the first Italian coffee company to obtain a B-Corp certification.

Little’s is addressing packaging sustainability by becoming the first instant coffee company in UK supermarkets to go 100 percent plastic free. Its coffee pods and ground coffee bags are fully recyclable while its jars are of UK-made glass and aluminium lids. In 2022, Little’s moved its coffee capsule manufacturing from Europe to the UK so that all Little’s roasting and pod manufacturing is done in its on-site roaster, meaning it can both reduce its carbon footprint and be certain of good practices. As a result, the brand is on its way to being carbon neutral.

Since July 2023, Pact Coffee pouches have all been 100 percent recyclable. By being made from a single material, the bag is much easier to recycle into new plastics, and its low-density plastic design using a high proportion of recycled materials ensures it uses as little new plastic as possible. These bags also fund the ‘this bag saves’ project, which stops plastic bottles from entering our oceans. For every kilogramme of packaging purchased, ‘this bag saves’ recovers and recycles the equivalent of two plastic bottles from Asian rivers. Pact explains it chose this option over ‘compostable’ alternatives because around 90 percent of people in the UK do not have the means to compost at home, and compostable packaging can take years to break down, meaning most ends up in landfill or food waste, where it blocks the recycling process. Pact’s carbon footprint is then offset by SeaTrees, a project which protects and regenerates coastal eco-system by planting and restoring aquatic plants that are highly effective in absorbing carbon.

Fostering a better balance between nature and people is something Traditional Medicinals is working towards, with its Traditional Medicinals Foundation. The mission of the foundation is to help people live consciously connected to nature through two pillars: making herbal education accessible and fostering a mindset of stewardship through interacting with nature and conserving resources.

In 2023, Traditional Medicinals aligned with the Science Based targets initiative (SBTi), aiming to reduce Scope 1 and 2 emissions by 42 percent by 2030, and achieve net zero emissions by 2050. The company also conducted a natural capital impact assessment that enabled it to identify, measure, and value direct and indirect impacts and dependencies on natural capital. The framework is crucial for understanding the dynamic relationships between organisations and the health of the natural world, which critically informs decision-making.

Suppliers commit to a greener future

As with the brands and companies they work with, suppliers to the coffee and tea industry are also passionate about utilising sustainable practices throughout the supply chain. This dedication to sustainability is reflected in multiple ways such as ethical sourcing, environmental protection, climate adaptation, energy efficiency and waste reduction. Below is a sampling of coffee and tea suppliers, which through their sustainable practices, are contributing to a healthier planet and a more sustainable future. By Aubrye McDonagh Leigh

IMA Coffee is committed to increasing sustainable practices to reduce roasting emissions and test alternative packaging materials, implementing advanced eco-friendly solutions throughout the industrial process to rise to the challenge of coffee sustainability. Over the past few years, IMA’s approach to sustainability has led to the design and adaptation of packaging technologies to effectively handle compostable materials, in collaboration with important partners in the field.

Recently, Italy-based IMA Coffee, in partnership with Minnesota-based NatureWorks, a leading manufacturer of polylactic acid (PLA) biopolymers made from renewable resources, developed a new compostable coffee pod solution compatible with Keurig brewers for the North American market. For the rigid capsule body, NatureWorks was able to combine non-compounded, highly crystalline, and heat resistant Ingeo PLA grades with a refined single-stage thermoforming process to achieve production rates comparable to incumbent polypropylene (PP) capsules. The rigid thermoformed capsule was then combined with a non-woven filter and multi-layer top lidding solution, also made with Ingeo. The use of one primary material through all three components of a coffee pod is more cost effective and offers greater consistency when heat sealing the components together, thus preserving the taste and aroma of the enclosed coffee.

The collaboration between NatureWorks and IMA, bolstered by IMA OPENLab, the group’s network of technological laboratories and testing facilities, laid the groundwork for a new market-ready coffee pod solution. Multiple studies and tests on the new compostable material and its performance throughout the packaging process have led to the proper configuration of IMA’s coffee-pod filling and sealing machines, enabling them to handle the rigid capsule, filter, and multi-layered top lid made of Ingeo PLA biopolymer with high precision. This will facilitate the easy setup of new production lines, thereby offering a turnkey compostable and sustainable solution at high production speeds, ensuring high-quality brewing.

With the world’s largest production capacity for empty Nespresso-compatible aluminium coffee capsules, AluSense products are distributed in over 80 countries. The Belgium-based company offered the first capsule made from 80 percent recycled aluminium, boasting CO₂-neutral accreditation to ensure zero environmental impact.

AluSense’s latest innovation, BioSense capsules, are 100 percent bio-based and compatible with all Nespresso Original Machines. These empty capsules mark a significant step towards sustainability without compromising on quality. The mono-body design and custom dome shape of BioSense capsules allow for packing over 20 percent more coffee into each capsule, the highest volume in the home-compostable market. These capsules also provide exceptional protection against oxygen and moisture, ensuring coffee retains its rich flavour.

BioSense home-compostable coffee capsules are made entirely from second-generation end-use bio-based materials, free from PLA, plastic, oil, bisphenol A, or fossil fuels. Their fully compostable nature is validated by the OK compost HOME certification. BioSense also holds certifications from Hansecontrol, SGS, TUV, ISSC, and CO₂ Neutral.

Descafeinadores Mexicanos (Descamex)’s sustainability strategy is based on three main pillars: the community, the environment and the people. Its sustainable practices include:

  • Certifications: Since 2007, Descamex has been certified by the Rainforest Alliance and Bird Friendly. With these, it directly and indirectly employs better agricultural practices.
  • Social Responsibility Badges: Since 2005, the company has maintained the ESR badge (Socially Responsible Company), seeking to promote social responsibility and is one of the three SMEs in Mexico that has had the badge the longest. In 2024, Descamex finalised its SMETA four pillars audit and is now 100 percent compliant.
  • Planting of trees: Through its volunteer programme, Descamex planted 135 fruit trees between April 2023 and April 2024.
  • Energy efficiency: Descamex uses the energy storage system obtained with cleaner generation methods (hydroelectric) with a monthly impact that stops the emission of 27.6 tons of CO2, equivalent to planting 1,660 trees.
  • Waste management: At the end of 2023, Descamex’s recycling rate was 87 percent, the coffee powder generated is donated as fertiliser to the coffee plantation, which improves the soil quality.

Mexico-based Descamex also supports World Coffee Research, which unites the global coffee industry to drive science based agricultural solutions to urgently secure a diverse and sustainable supply of quality coffee today and for generations to come.

Kloth & Köhnken Teehandel GmbH offers fine teas, sophisticated formulations and flavoured/scented tea innovations and has espoused sustainable values since its formation. The Germany-based company believes that sustainable actions cannot be decreed, rather it is a learning process. FairBioTea is a private sector initiative focused on the development of healthy and sustainable, fair and ecological tea production operations and industry. Through its FairBioTea development partnerships, Kloth & Köhnken actively supports Chinese tea farmers who are growing sustainably and improving their quality management.

Since 2007, together with selected tea gardens, Kloth & Köhnken has been helping to make farming more ecological, transparent and sustainable. The company is especially proud of its long-standing cooperations in tea-producing countries where its partners dictate the pace at which they adopt environmentally friendly practices. Through FairBioTea, Kloth & Köhnken establishes a fair and reliable framework for transparent, sustainable tea production, culminating in a premium product.

Most teas Kloth & Köhnken purchases are certified (Rainforest Alliance, Fairtrade, organic and Fairbiotea). Its certified products exceed the EU organic regulations, and their cultivation also encompasses land use and nutrient cycles, which in the long term will help preserve soil fertility.
Additionally, for more than three years, Kloth & Köhnken’s sustainability team has been working to implement all requirements for the new German due diligence law and for the European regulations to come. This includes the Code of Conduct, which defines internal company requirements as well as minimum standards for environmental, social and ethical obligations. The Code of Conduct is the basis for developing a business relationship with Kloth & Köhnken, which supports companies that take care of their business sustainably, treat their employees well and protect the environment.

Furthermore, under the motto ‘K&K Goes Green’, the topic of sustainability will become more of a focus for Kloth & Köhnken and internal processes will be optimised and made more efficient. This includes asking all employees for suggestions and ideas and raising awareness for a more sustainable way of living.

As the world faces unprecedented environmental challenges, the importance of sustainable agricultural practices cannot be overstated. Australian Native Products (ANP) promotes sustainability through its cultivation and processing of lemon myrtle. The Australia-based company’s efforts are not just about meeting market demands but also about ensuring the health of our planet and the well-being of future generations.

ANP’s Environmental Management Policy underscores its commitment to optimising quality produce while enhancing the sustainability of natural agricultural resources. This policy is built on several key pillars:

  • Resource Efficiency: Implementing precision farming techniques, optimising irrigation practices, and striving to minimise energy consumption by utilising renewable energy sources whenever possible. Soil conservation measures such as mulching and utilising waste stream materials in composting are also employed.
  • Biodiversity Conservation: ANP creates wildlife habitats, maintains natural ecosystems, and minimises the use of pesticides and herbicides that may harm non-target species. Its agricultural practices are designed to support, rather than hinder, biodiversity.
  • Waste Reduction: Strategies to reduce, reuse, and recycle farm waste are integral to ANP’s operations, such as composting product waste and minimising packaging waste.

ANP has also implemented a Climate Adaptation Strategy, which involves:

  • Climate-Smart Practices: Utilising climate-smart agricultural practices to ensure sustainable production. This includes the use of organic and biodynamic principles to maintain plant health and soil fertility, minimising the need for chemical inputs.
  • Carbon Sequestration: ANP farms contribute significantly to carbon sequestration. Its Lemon Myrtle trees absorb substantial amounts of CO₂ annually, helping to mitigate its carbon footprint.

ANP has achieved the Union for Ethical Biotrade (UEBT) and Rainforest Alliance (RA) ingredient certification for its Lemon Myrtle leaf products. Furthermore, ANP ensures that all its organic products meet the highest standards, maintaining the expectations of consumers and complying with a range of organic standards.

Looking ahead, ANP is committed to implementing its Biodiversity Action Plan, exploring adaptable cultivars, and investing in innovation for better processing mechanisms.

ANGEL, THE GREAT LITTLE ONE.

As per our industrial grinders, ANGEL is a high-tech product, equipped with discs in tungsten carbide (hardness: 1300 Vickers) and very high precision adjustment with resolution of 2 microns and digital display of discs position. Due to its solidity and high precision, it can produce batches of ground coffee in continuous cycle, with a capacity of 90-120 kg/h. The duration of the discs is in order of 40-80 tons, depending on fineness of ground coffee.

ANGEL can also grind Turkish coffee, with cardamom too; in this case, the capacity is around 50 Kg/h.

It is very useful for laboratories, in order to repeat very similar results of Colombini’s industrial grinders.

All the ANGELs are equipped with a cooling system by ventilation and inverter to adjust the RPM of the discs.

Five different versions can be provided and the prices are all similar.

The LAB and ST.V versions are equipped with a manual device that ensures, by means of a simple hand gesture, that the discharge duct remains cleaned inside every time a ground coffee package is filled.

The RTM.V and the RTM.V4 are equipped with an automatic cleaning system of the exhaust duct, very helpful when working in continuous cycle for several minutes/hours.

Degassing system® by BMM/Colombini

Since 2017, Colombini has been distributing the Degassing system®, produced by BMM Technology, the first to use high vacuum technology to accelerate degassing and the only one capable of significantly reducing energy consumption and nitrogen requirements throughout the process.

Coffee degassing

Starting with roasting, coffee begins to release carbon dioxide from roasting, requiring a degassing process. However, “natural” degassing is now unsuitable for the coffee industry: it takes too long, is influenced by climatic and environmental variables, as well as the different characteristics of the blends, and increases the risk of product contact with oxygen, resulting in oxidation and loss of quality.

Nowadays, it is therefore necessary to force and carefully control the process at every stage, while improving it where possible.

Made in Italy innovation and research

The main innovation introduced by the Degassing system® was to use high vacuum, with very high negative pressures down to -800mbar alternating with over pressure cycles with nitrogen injection (up to +300mbar). The right combination of these two phases accelerates the degassing process, and reduces time spent by up to 40%.

High vacuum, high efficiency, highest quality

This solution provides numerous advantages:

  • Minimising the need for nitrogen for transport and storage of the ground material while awaiting packaging, which can be done in vacuum or under pressure, resulting in considerable cost savings;
  • No moving mechanical parts during transport, reducing energy costs and eliminating maintenance and repair costs;
  • Zero risk of product oxidation;
  • Unaltered particle size distribution of the ground coffee throughout the process due to the transport of the ground coffee in the semi-dense phase.

Unrivalled energy and cost savings

Data collected from active plants shows the use of high vacuum alternating with high pressure cycles can reduce degassing times by up to 40%, and nitrogen consumption is up to 10 times lower than average, minimised both for transport and storage and during the degassing cycle, due to short total process times.

All this translates into financial savings of tens of thousands of euros per year.

IMA hosted another Academy Day was on 18 October 2023, after the HOSTMilano Exhibition, at the IMA Coffee Lab. It was a day of sharing and training attended by insiders, which included a programme packed full with papers and workshops on roasting and coffee packaging, with the participation of coffee experts, packaging specialists and international producers. 

From Bean to Capsule is the name of this new format of Academy Day at the IMA Coffee Lab: a experiential journey through coffee processing and packaging, to discover and manage the key drivers of coffee bean transformation, from the coffee varieties to how each roasting profile affects the aroma and taste of the coffee extracted from the capsule. Over than 50 coffee professionals from all over the world attended the Academy Day and had the opportunity to discover the IMA Coffee Lab, at the IMA Petroncini production facilities in Ferrara, and try out its pilot plant, the scaled-down coffee factory processing coffee from A to Z, exploring each and every way to enhance the quality of coffee and the efficiency of coffee processing and packaging

Workshops: Flexible roasting for infinite aromas

Participants had the possibility to try out the full line, performing roasting sessions and compostable capsule filling and sealing demonstrations. Alongside IMA Coffee trainers and specialised staff, participants tested the green, roasted and ground coffee for key parameters, and carried out quality analysis and in-cup tasting.

Three different roasting profiles were designed with the specific objective of creating different aromas and flavours in the cup, while maintaining the same grind specifications and the same amount of coffee in the capsule. Participants were able to experience the flexibility of the TMR roaster in designing three different roasting profiles with the same final temperature and colour: a fast roasting profile with a high amount of airflow, a medium-long profile with a low amount of airflow and a medium-long profile with a high amount of airflow. The roasting sessions were followed by compostable capsule filling and sealing demonstrations on the SR1 Smart, one of IMA Coffee’s most reliable fillers for the handling of compostable capsules, even in low production volumes.

Comparative cupping sessions have been conducted by Matteo Barbarossa, coffee expert at IMA Coffee Hub, to recognise how different roasting profiles can decisively influence the final taste of capsule coffee by targeting the same ultimate colour of roasted beans, processing the same green origin.

Coffee Talks

Through several Coffee Talks throughout the day, participants had the opportunity to deep dive into each step of the process, from the botanical varieties of green coffee to the most accurate and reliable packaging technologies for coffee capsules.

Barbarossa explained how each green coffee origin can influence the roasting profile, analysing the differences between coffee varieties in terms of chemical and physical characteristics and providing useful tips for conducting the roasting process in a way that enhances each origin in the cup.

Michelangelo Parro, sales and product manager at IMA Coffee Hub offered an in-depth analysis of flexible roasting and degassing processes, which can be considered the crucial steps to achieve the desired aroma in the capsule.

“Roasted coffee batch can have the final colour as another, but with totally different aromas and body. With flexible roasting, starting from the same raw product, we can achieve infinite different results with the same ending colour, but with predictable times and temperatures thanks to Orchestra, IMA Petroncini’s TMR roasting trend’ simulation and control system. Once the desired final roast is achieved, our goal is to perfectly preserve the coffee’s aromas: for this reason we have engineered CO-Tube, a degassing system in vacuum condition with nitrogen insufflation, which is able to avoid any contact of the coffee with oxygen, while allowing us to prepare a uniform distribution of ground coffee particles inside the capsule,” Parro said.

“The particle size distribution of the ground coffee is the most important factor linking coffee processing to capsule packaging,” commented Alessandro Nobili, head of product management at IMA Coffee – Packaging Solutions, “We have to maintain the same precision in the coffee dosage for each batch, so as to have a constant volume and particle size distribution within each capsule, to guarantee the same quality of extracted coffee. That is possible thanks to the capacity of the system to control the coffee level inside the dosing unit and minimise the particle wire drowing. Accurate weight is an easy target to respect thanks also to the on-line weighing system which checks each capsule and gives feedback to the dosing unit if automatic adjustments are required.”

Alessandro Nobili conducted an in-depth analysis of the IMA’s innovative technologies for capsule sealing, meant to keep the coffee freshness and aromas inside the capsule until the extraction, especially when it comes to compostable capsule. This is possible thanks to the capacity of the sealing station to process different sealing times, thanks to the implementation of magnetic shuttles handling the capsules, so allowing customers to select the most appropriate solution based on materials used and the product they are processing. That is crucial for handling different materials on the same machine” Nobili says.

Sustainability spotlight

A round table was set up to discuss how manufacturers can develop low-impact technologies to reduce emissions, thus preserving the resources and maximising energy efficiency. Manufacturers and roasters so can push the boundaries of sustainability by choosing eco-friendly packaging solutions and processes, minimising environmental impact along the coffee supply chain. Sustainability is a core pillar of IMA Zero mission, indeed, the IMA programme investing in technologies that reduce waste and demonstrate greater respect for the environment.

During the round table discussion on the topic of Energy saving and Emission Treatment in coffee roasting, Maurizio Mazzoni, R&D manager at IMA Petroncini, Michelangelo Parro, sales area and product manager at IMA Coffee, and Manuel Marcelli, managing director of ReiCat Solutions Italy, emphasised how commitment and collaboration are increasingly important factors to minimise environmental impact in industrial coffee production, developing the best solutions to reduce emissions with innovative low-impact technologies.

“This is evident in the latest projects developed by IMA Petroncini and ReiCat, which combine the sophisticated heat recovery and hot air cleaning system of TMR roasters with ReiCat’s catalytic solutions, achieving the lowest level of CO emissions and meeting positively ESG criteria in terms of environmental sustainability.” Mazzoni said.

When it comes to packaging materials, Martyna Fong, director market Iitelligence at AMI, and Emanuele Simonini, materials technologist at IMA OPENLab, shared their studies and views on new sustainability drivers and packaging waste regulations, along with new eco-friendly projects for coffee packaging that are currently underway at IMA OPENLab to meet the growing demand for compostable and paper-based packaging.

The Academy Day From Bean to Capsule was a real full immersion on coffee, said IMA, to improve knowledge of the entire process, sharing ideas, projects, business purposes; learning how to achieve limitless aromas from coffee and how to optimise capsule packaging, but it was also the suitable occasion for equipment manufacturers and coffee experts to share best practices and insights on eco-friendly and sustainable processes and packaging solutions, looking at the market trends.

As per our industrial grinders, ANGEL is a high-tech product, equipped with discs in tungsten carbide (hardness: 1300 Vickers) and very high precision adjustment with resolution of two microns and digital display of discs position; due to its solidity and high precision, it can produce batches of ground coffee in continuous cycle, with a capacity of 90-120 kg/h. The duration of the discs is in the order of 40-80 tonnes, depending on the fineness of the ground coffee.

ANGEL can also grind Turkish coffee, with cardamom too; in this case, the capacity is around 50 Kg/h.

It is useful in laboratories to repeat very similar results of our industrial grinders.

All the ANGELs are equipped with a cooling system by ventilation.

The TMR also uses just one burner as a heat generator and after burner to reduce carbon dioxide, NOx and VOC emissions. The heat recirculation allows, on average, 30 to 35 percent energy saving, compared to traditional roasters.

“Thanks to OPENLab, we can analyse new sustainable and innovative materials such as compostable, paper-based, or ultra-thin film, before they are commercially available,” said Alessandro Nobili, head of product and project management at IMA Coffee | Packaging Solutions.

At HOSTMilano, IMA will be presenting the latest projects developed at IMA OPENLab alongside the new SB1 LAB, an extremely compact rotary machine for the filling and sealing of single capsules, and the SR4N, designed for medium production volumes. Cutting-edge automation technologies combined with the clean design of SYNKRO allow for non-stop production. Both semi- and fully automatic reel-feeding are possible. Pre-arranged to connect to loading systems via AMR (Autonomous Mobile Robot), the machine also features an automatic reel-splicing system.

SYNKRO also features an innovative dosing unit that implements pre-compression to compact the coffee during capsule filling for a homogeneous product; this guarantees consistent dosing throughout each batch. Accurate weight is an easy target to respect thanks also to the on-line weighing system which checks each capsule and feeds data back to the dosing unit if automatic adjustments are required. Additionally, the dosing unit’s off-set design minimises the distance between capsules for important savings on packaging material.

Syntegon is very excited to have the PMX packaging machine to bring to the coffee market. The PMX can be used for ground coffee and whole beans and can also accommodate different packaging formats thanks to fast changeover times.

A modular concept enables manufacturers to react quickly to fluctuating market requirements and customer needs. Along with its undeniable flexibility, the PMX simultaneously fulfils modern requirements with respect to sustainability and digitalisation. Moreover, the new digital solution Synexio Empower offers cost savings through condition monitoring by optimising energy and material consumption.

With the PMX, different bag variants and closure elements can be combined along with different sealing options, like full-corner-sealing, which allows for perfect shelf appearance. Therefore, specific customer requirements can be realised, while also achieving efficient output. For example: the PMX can pack up to 65 packages of 500 grams of whole coffee beans per minute. The machine can accommodate an output of up to 100 packages per minute through its double tube version.

During the packaging process, if the bag cross-section format is changed, the machine will be ready for use again after just 30 minutes. It is therefore suitable for small, medium, and large packaging formats.

The PMX produces coffee bags with package weights between 200 and 1200 grams, both with upright and downfolded top parts. The bags are resealable via tin tie, labels, or adhesive tape. If required, manufacturers can use an innovative spout closure through which the coffee beans are emptied out at the packaging side – a convenient feature, especially for end users. This “neutrafill” process, in which the coffee is gas-flushed before and during the packaging process, ensures aroma protection.

Announced back last April 2021, NatureWorks and IMA Coffee’s joint strategic partnership accelerates on the first significant trial phase on K-Cup compatible compostable coffee pods.

Compatibility testing on capsules, filter, and top lid films are being performed at IMA Coffee Lab with the precise aim to identify and achieve optimum material sealing parameters and limits as well as a suitable set up of IMA packaging machineries to handle the pods successfully.

Tests are carried out under the supervision of IMA Coffee R&D team and in close and constant co-operation with NatureWorks specialists: dedicated tools are used to simulate filter and top lid films sealing phases and adjust parameters according to testing results.

The sophisticated microleakage detection testing performed at IMA Coffee Lab has given more than encouraging and optimistic results allowing a significant step forward in the process that will proceed thoroughly towards the following coffee extraction testing phase, say the companies.

At NatureWorks, development of new single-stage thermoforming processes and capsule designs continues to produce precise capsules that meet IMA’s specifications for filling and sealing on their packaging machines.

NatureWorks has also constructed a custom Data Acquisition System for K-Cup compatible pods that is being used to understand and benchmark how differing capsule designs perform under various brewing conditions.

“With the promising results we’ve seen so far, we have already begun the next phase of development by partnering with converters in North America to bring these new compostable pod designs to commercial scale making them available to brands and roasters seeking to meet consumer demands for more sustainable packaging and to circular economy directives that specify compostable packaging as a key enabler of recovering food waste for compost,” said Flavio Di Marcotullio, global industry manager, Single Serve Beverages for NatureWorks.

Coffee capsules are complex structures where the capsule body, lidding, and filter must be precisely designed to deliver a consistently high-quality brewing experience. Before the capsules reach consumers, it’s critical that these components perform well during assembly and filling as well as on the shelf and during brewing. By bringing together NatureWorks’ materials and applications knowledge with IMA’s machinery expertise, the partnership aims to deliver a turn-key compostable coffee pod solution to the entire coffee industry making it simple to have a great cup of coffee and dispose of the used pod in the most sustainable way possible.

With this in mind, to give greater impetus to the topic and direct the production chain towards increasing environmental sustainability, in 2019 IMA launched IMA Zero and one of its pillars, IMA NoP – No Plastic Program. “NOP (No-Plastic Program) means we promote eco-friendly plastic substitutes for the packages manufactured on IMA machines. Through the research and testing of alternative processes and materials, together with customers, material suppliers and partners, we foster plastic-free and sustainable, compostable packaging solutions. IMA has also established the Open Lab where Material Technologists study, develop, and test compostable and recyclable materials to be used on our packaging equipment,” says Nicola Panzani, IMA Coffee sales manager and IMA Coffee Petroncini CEO.

A now historic collaboration between two companies: Caffè Borbone, a pioneering Neapolitan espresso brand, and IMA, leader in the design and production of packaging machinery, started in 2009, when Massimo Renda, executive president of Caffè Borbone chose IMA as the supplier of a dedicated integrated machine for the production of coffee pods complete with outer envelope and packed in cartons.

The two companies share the same corporate strategy and values, as they’ve always championed product diversification, and focused on environmental friendliness and social and economic sustainability. Both are also extremely innovation-oriented, drawing on their solid experience in the field of research and development.

Since 2021 IMA has followed and supported the Borbone project based on the conversion of CA3 machines, to ensure the best sealing of the pod wrapping material, perfecting the sealing technology with the aim of putting on the market a product that is completely recyclable after its separate collection as paper.

In the coffee industry, a good packaging system allows the product to be preserved from contact with oxygen, which causes the oxidation of the molecules that give coffee its taste and aroma. CA3 by IMA is a compact, fast and integrated machine capable of packaging both soft and compact pods, in a modified and conditioned atmosphere, which can be maintained thanks to the constantly controlled feeding of nitrogen in a protected environment, inside of which humidity and temperature are unchanged to ensure the highest product quality.

IMA Coffee offers a wide range of solutions, in terms of both production capacity and type of capsule and material to be used, thus contributing to the complete renewal of the range of machines for compatible products. The goal with Caffè Borbone was to increase production volumes, confirming Caffè Borbone’s expectations from capsule technology, i.e. better preservation of the taste of its Neapolitan espresso. CO-Tube – The next-generation Degassing System

Degassing is a natural chemical reaction that happens inside the beans once ground. Preventing package inflation and avoiding coffee oxidation are the main factors that have led to the spread of degassing technologies over recent years, especially in the single-serve market.

The new degassing system CO-Tube was designed last year, and is what Nicola Panzani, CEO of IMA Coffee Petroncini and Sales Director at IMA Coffee, describes as a “strong evolution” of existing solutions.

IMA Coffee Petroncini has developed CO-Tube, a system capable of accelerating the degassing time with a nitrogen (N2) injection, in a deep vacuum environment at -800 mbar. A closed-handling system almost allows zero-oxygen process conditions making it unique on the market. The oxygen does not enter in contact with the product, so as to guarantee the maximum aroma preservation with a significant impact on the product shelf-life.

As a result of the closed-circuit adopted, CO-Tube is the only system available on the market today able to partially recover the nitrogen needed during the process. A nitrogen closed circuit reduces the quantity of nitrogen dispersed in the environment with significant savings in terms of inert gas to be added to continue the process, so as to have a nearly-free-from-gas working area and environment as a consequence. Furthermore, this specific process engineering enables the temperature control of the gas so as to maintain the temperature stable inside the system, despite the environmental temperature. As a result of the gas temperature modulation, it is possible to customise the degassing times, recipe by recipe.

The recirculation of the product is another innovation of CO-Tube, compared to other existing systems. It enables the ground coffee to homogeneously make contact with the nitrogen from the top to bottom of the silo. The recirculation the coffee is done by controlling the gas temperature, avoiding product overheating. This process results in a further acceleration of the degassing time.

A superior consistency of the product completes the CoTube advantages. The final high-quality product is guaranteed by piping and extraction systems designed to ensure the particles distribution preservation, which is a key factor to ensure that the capsule produces a quality brew.

 

SR SMART Series – versatile and flexible last generation capsule filling and sealing machines

The SR SMART Series is a range of versatile and flexible last generation machines, equipped for the filling and sealing of capsules on 1 and 2 lanes. The unique ergonomic cantilever design assures great accessibility for maintenance, service and easy cleaning; furthermore, the pullout operating system significantly reduces line downtimes resulting

in a great efficiency increase. Lid and waste reels are placed outside the machine, reducing downtime.

Thanks to a very fast size changeover and to an integrated double feeding system, for bulk and stacked capsules, the SR SMART Series can handle any type of capsule in plastic, aluminum and compostable material. Capsules can be closed at the top with aluminum film, micro perforated, filter paper, triplex coupled, PP and compostable lid. Filters and diaphragms can be inserted into capsules and on their bottom. According to the machine configuration, speed can vary from 60 to 120 capsules per minute.

Key attributes of the solutions developed by IMA ensure significant flexibility enabling a fast response to diverse market requirements:

  • All SR SMART Series models can handle any capsule type available on the market, whatever material it is made of:
  • Aluminium – Plastic – Compostable
  • Capsules can be fed in bulk by means of an unscrambler or stacked through a denester, guaranteeing a delicate handling for aluminum capsules for example.
  • The SR SMART Series can be equipped with dedicated dosers to handle coffee, tea leaves and soluble powders.

 

C-900 New high speed capsule cartoning machine

IMA Coffee will be releasing at HOST its new C-900 capsule cartoning machine.

The new capsule cartoner C-900 represents an excellent choice as a turnkey solution combined with IMA high speed capsule filling machines. The cartoner can handle any type of capsule available on the market, in plastic, aluminum, recyclable and compostable material.

The C-900 can pack capsules in a wide range of sizes and carton configurations. To ensure capsule stability and integrity, the cartoner allows the insertion of interlayers and/or inlays according to customers requirements.

The capsule transfer feeding system is equipped with a buffer and capsules recirculation unit and guarantees extremely gentle handling, avoiding capsules damaging. Capsules are fed in a bucket chain and transferred by a pick & place system equipped with gripper-suction cup type units able to respond to any desired configuration.

According to required machine speed and carton capacity, the C-900 can be completed with a single or double flat blank carton magazine.

 

TTA120 Traditional roaster

On show at HOST also a TTA120 traditional roaster with the new roasting control Opera30.

The Petroncini TTA 120 has a traditional and elegant architecture. The heat generator unit is positioned into the steel insulated chamber and, thanks to its advanced technology, allows a perfect roasting control, optimizing the thermal efficiency and the roasting air quality. The drum placed into the roaster body is completely insulated to have a reduced heat release to the ambient and a better control of the flow. This machine is the right choice for roaster looking for gourmet coffee and traditional roasting profiles.

The TTA 120 traditional roaster configuration enables to carry out either a time-temperature or a temperature-to-temperature curve of roasting. Thus, OPERA 30, the TTA roasting control, allows to choose to roast by time or by temperature, customising up to 30 steps of roasting. OPERA 30 includes the ROASTING MANAGER App, for the recipe and roast deep analysis.

Special systems for the recovery of energy from the heat of fumes, now a consolidated technology for preheating green coffee. The use of a preheater notably reduces consumption and increases productivity. NatureWorks, the world’s leading manufacturer of low-carbon Ingeo PLA biopolymers, and IMA Coffee, global market leader in coffee handling, processing, and packaging, have announced that they have entered into a joint strategic partnership aimed at accelerating the market for high performing K-Cup compatible compostable single-serve coffee pods in North America. The multi-year partnership brings together NatureWorks’ decades of expertise with compostable materials, formulations, and processing technology with IMA’s industry-leading competencies and application-specific know-how encompassing all stages of coffee handling, processing, and packaging.

The pressure on the single serve coffee market to make more meaningful progress towards a more sustainable packaging solution has grown significantly in recent years. Consumers appreciate single-serve capsules for the convenient and quality brewing experience but see the packaging waste associated with a capsule as a detriment. Compostable capsules create the opportunity to not only address consumer concerns and divert the packaging away from landfills, but, perhaps more importantly, to recover the used coffee grounds, enabling their processing at a compost facility where they deliver valuable nutrients to the final compost.

Coffee capsules are complex structures where the capsule body, lidding, and filter must be precisely designed to deliver a consistently high-quality brewing experience. Before the capsules even reach consumers, it’s critical that these components perform well during assembly and filling as well as on the shelf and during brewing. By bringing together NatureWorks’ materials and applications knowledge with IMA’s machinery expertise, the partnership aims to deliver a turn-key compostable coffee pod solution to the entire coffee industry making it simple to have a great cup of coffee and dispose of the used pod in the most sustainable way possible.

With this in mind, to give greater impetus to the topic and direct the production chain towards increasing environmental sustainability, in 2019 IMA launched IMA NoP – No Plastic Program. NOP (No-Plastic Program) means we promote eco-friendly plastic substitutes for the packages manufactured on IMA machines. Through the research and testing of alternative processes and materials, together with our partners, we foster plastic-free and sustainable, compostable packaging solutions. Nicola Panzani has been appointed as the new CEO of IMA Coffee Petroncini, guiding the company towards new important goals, the product of important synergies. He succeeds Claudio Giberti, who had been CEO of the Ferrara, Italy based company since 1990.

Panzani started at IMA as project manager in 2017, and in 2018 he assumed the position of strategic marketing manager. He most recently served as sales director of IMA Coffee where Panzani actively contributed to building the IMA Coffee Hub and developing important synergies in the coffee world.

“Commitment and continuous research have worked as essential tools that have enabled Petroncini to reach very important milestone over the past year: 100 years creating solutions for the coffee industry,” said Giberti, who has assumed the position of director of special R&D projects at IMA Coffee Petroncini. “I’m really glad to pass on this leading role to a very talented person, whom I deeply trust. [Nicola] will guide the company towards newer, broader horizons.

Commenting on his new CEO role, Nicola Panzani said: “Since the establishment of the IMA Coffee Hub in 2017, the company has been growing exponentially. IMA Coffee is inviting players in the portioned coffee industry to participate in the International Virtual Congress on Coffee Capsules which will be held online from 16-17 November 2020.

The two days will be full of talks dedicated to the world of coffee capsules which will touch on the keywords of sustainability and recycling, innovation and quality management, market analysis, science, and the specific technologies required for a coffee capsule plant.

Representing IMA Coffee during the congress is Tim Holdmann, IMA group sales manager for Coffee & Tea, presenting: “Turn-key supply of a coffee capsule plant”. The speech will be dedicated to an in-depth investigation of the most relevant phases in the production of capsules, thus illustrating the combined solutions offered by the IMA Coffee Petroncini and IMA Coffee Packaging brands with a particular focus on roasting, grinding and degassing, as well as the critical aspects of capsule filling and related cartoning.
