Brambati SpA
In February 2024, Brambati started teaching SCA courses on roasting and tasting (basic and intermediate) again at its Advanced Food Lab. The first two sessions of the Brambati Roasting Camp were intended for project managers and technicians who test plants around the world, in order to offer their customers more specialized support on recipes, during the testing and training phases.
The course aims to increase knowledge of the raw material selection and roasting process, delve into coffee chemistry and the use of equipment to improve the final result in the cup, the only real goal for the “master roaster”

Degassing system® by BMM/Colombini
Since 2017, Colombini has been distributing the Degassing system®, produced by BMM Technology, the first to use high vacuum technology to accelerate degassing and the only one capable of significantly reducing energy consumption and nitrogen requirements throughout the process.
Coffee degassing
Starting with roasting, coffee begins to release carbon dioxide from roasting, requiring a degassing process. However, “natural” degassing is now unsuitable for the coffee industry: it takes too long, is influenced by climatic and environmental variables, as well as the different characteristics of the blends, and increases the risk of product contact with oxygen, resulting in oxidation and loss of quality.
Nowadays, it is therefore necessary to force and carefully control the process at every stage, while improving it where possible.
Made in Italy innovation and research
The main innovation introduced by the Degassing system® was to use high vacuum, with very high negative pressures down to -800mbar alternating with over pressure cycles with nitrogen injection (up to +300mbar). The right combination of these two phases accelerates the degassing process, and reduces time spent by up to 40%.
High vacuum, high efficiency, highest quality
This solution provides numerous advantages:
- Minimising the need for nitrogen for transport and storage of the ground material while awaiting packaging, which can be done in vacuum or under pressure, resulting in considerable cost savings;
- No moving mechanical parts during transport, reducing energy costs and eliminating maintenance and repair costs;
- Zero risk of product oxidation;
- Unaltered particle size distribution of the ground coffee throughout the process due to the transport of the ground coffee in the semi-dense phase.
Unrivalled energy and cost savings
Data collected from active plants shows the use of high vacuum alternating with high pressure cycles can reduce degassing times by up to 40%, and nitrogen consumption is up to 10 times lower than average, minimised both for transport and storage and during the degassing cycle, due to short total process times.
All this translates into financial savings of tens of thousands of euros per year.
